There are few baked treats tastier than a slice of classic banana bread , but we’ve kicked it up a notch and added juicy blueberries to the mix. The result is a sweet bread so moist it almost falls apart in your hands.

The best part: You don’t need to plan ahead and wait for your bananas to turn brown (though overripe bananas will certainly work). We’ve formulated our recipe to provide maximum banana flavor from just-ripe bananas, plus mouthwatering bursts of blueberry from fresh or frozen berries.

A handful of walnuts adds some crunch, though it’s just as yummy without them. Serve up this blueberry banana bread at your next brunch get-together.

Ingredients

  • 1 3/4 cups all-purpose flour , plus 1 Tbsp. to toss with blueberries

  • 1 tsp. baking soda

  • 1/2 tsp. kosher salt

  • 1/2 cup vegetable oil

  • 1 cup granulated sugar

  • 3 ripe bananas , peeled and mashed

  • 2 large eggs

  • 2 tsp. vanilla extract

  • 1 1/2 cups fresh or frozen blueberries

  • 1/2 cup chopped walnuts (optional)

Directions

  1. Gather ingredients:

    Preheat the oven to 350°F. Grease a 9- x 5-inch loaf pan with cooking spray. Gather your ingredients.

  2. Combine dry ingredients:

    In a medium bowl, whisk together 1 3/4 cups flour, baking soda and salt.

  3. Combine oil and sugar:

    In a large bowl, beat oil and sugar with an electric mixer on medium speed until combined.

    Add bananas, eggs and vanilla and beat on medium until combined. Add flour mixture and beat on low speed until just combined.

  4. Add blueberries:

    Gently toss the blueberries with the remaining 1 Tbsp. flour. Fold the blueberries and walnuts (if using) into the batter.

  5. Bake bread:

    Pour the batter into prepared loaf pan.

    Bake 65-75 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pan on a wire rack 10 minutes, then remove from the pan and cool completely on the wire rack.
