1 (16-oz.) pkg. refrigerated chocolate chip cookie dough
1/2 cup (4 oz.) cream cheese , softened (from 1 [8-oz.] pkg.)
3/4 cup powdered sugar
3 cups frozen whipped topping (from 1 [8-oz.] container), thawed, divided
2 cups cold whole milk
1 (5.9-oz.) pkg. instant chocolate pudding and pie filling (such as Jell-O)
1 (4-oz.) 60% bittersweet chocolate bar
Preheat oven to 350°F. Coat a 9-inch square baking pan with cooking spray; press cookie dough evenly into prepared pan. Bake in preheated oven until golden brown around edges, about 16 minutes. Cool completely in pan on a wire rack, about 30 minutes.
Meanwhile, beat cream cheese and powdered sugar in a large bowl with an electric mixer on medium speed until smooth, 2 to 4 minutes. Gently fold in 1 cup of the whipped topping. Spread cream cheese mixture evenly over cooled crust.
Beat together milk and pudding mix in a medium bowl with an electric mixer on medium speed until thickened and smooth, about 2 minutes (some small pudding mix granules may remain). Carefully spread pudding evenly over cream cheese layer in pan. Gently spread remaining 2 cups whipped topping over pudding.
Drizzle 5 straight lines of chocolate syrup in even rows on top of whipped topping.
Drag a wooden pick back and forth perpendicular to syrup lines to create a design.
Shave long edge of chocolate bar with a vegetable peeler to create about 1/4 cup chocolate curls; reserve remaining chocolate bar for another use.
Sprinkle chocolate curls over chocolate syrup design. Cover and refrigerate until firm, at least 2 hours or up to 12 hours.
